What you are probably wondering… is why i have been absent from the blog world quite a bit these past few weeks, or maybe not, maybe you could care less… Well either way, i will tell you.  Not only did i come out of this semester with the final exam grades that i expected and worked for, but i have taken on a new sort of “personal challenge” and i decided that i am going to run a few 10k races in my training time before my upcoming marathons, and that i would like to complete them in under forty-two minutes.  This would mean cutting down my average time a whole minute and a half or so, which could prove to be fun!  Have i ever run below forty-two?  Well, since i hardly ever look at my watch half-way through a run (i always wait until the end and am satisfied with my time no matter what), my personal best came on a day where i was competing with a friend and i actually ran a 40:41 10k.  This was a couple of summers ago and i have never tried to match that, but am beginning to speed train as of today to attempt to!  If any of you are interested in my speed workouts or routines, please don’t hesitate to shoot me an email and i would be glad to discuss the common denominators of a good speed workout!

What you are probably wondering… is what my concrete plans are for the summer, since i am now finished my winter semester?  Although i have been trying to solidify plans myself these past couple of days/weeks, a completely new option has seemed to present itself to me that i had ALMOST lost hope in… It would be an amazing opportunity and would allow me to display my creative spirit both through my writing and in one of the most geographically awe-inspiring places to boot!   There are major changes coming in my life, and once everything has settled, i can’t wait to share it with you guys!  I am in kind of a transition period right now, so i appreciate EVERY single comment i receive and always love feedback!

What you are probably wondering… is how many miles i put in a week (running)?  On average, i usually peak-out at around 50, sometimes more, sometimes less.  It all basically depends on how i feel and whether or not i have decided to incorporate lots of cross-training, bike-riding, rollerblading, or simply feel as if rest is the best possible thing to do that week.  I love tht i am at a place in my life right now where i have recognized that when my body needs rest, IT NEEDS REST, and i feel so much better for it.  All of you out there who don’t take advantage of down-time, please do. I can’t stress enough how important it is to let your body heal properly.  Take a day, take a few days, don’t cut down on your food intake, just live and follow your heart and hunger on your off days.  Athletes:  Most of the time the reason you are experiencing pain or frequent injury is because you are lacking in the most important aspect of athletic performance (REST), if you are starving all of the time and go to bed hungry only to wake up and hit the pavement, you are depriving yourself of the nutrients your body wants and needs.  Don’t be afraid to give it what it wants!

What you are probably wondering… is when i will start posting my cross-training workouts, tips for runners, and video-recipes?  Next week has taken on a new theme for me:  Out with the old, and in with the new… Not only will i be the owner of a fresh, new apple.  But i will have the proper chords and outlets to hopefully upload some pretty decent quality clips :)

What you MAY be wondering… is what i made for breakfast this morning?  Something completely NEW to me!  Everyone has to try this smoothie. In a word, it was EPIC.  Grr… Even joking about that word erks me…  To anyone who uses this “phrase” frequently, please find it in you to switch things up every once in awhile.  You might have screwed up your oats yesterday morning, but for some reason i don’t think we can consider that an “Epic Fail”.  Here is my smoothie that was pretty impressive, if i do say so myself…

Just Beet It Smoothiebeet it by Darwin Bell.

  • 2 Tbs. Cashews
  • 2 Tbs. Hemp Protein
  • 2 Tbs. Pumpkin Seeds
  • 1/2 Cup Freshly Steamed Beets
  • 4 Handfuls of Spinach
  • 1 Cup Unsweetened Almond Milk
  • 1 Tbs. Carob Powder
  • 1 Cup Water
  • 1 Tbs. Your Choice of Nut Butter

This was certainly atypical, uncommon, remarkable, notable, moving or even stirring!  Just a few words to slowly weed out this epic phase…  Oh ya, and i am on a beet-kick lately, so expect the Ultimate raw beet-patty recipe next :D

Decisions, Decisions…

Let me start by saying that i am so happy that i have finally found a decent amount of time to start posting on a school computer in between classes.  Although it may take longer, i will bring my cam to school with me from now on and upload from here!  Another little note:  I am going to try and get a few core workouts along with photos posted on a new page i will be creating Friday or Saturday properly entitled “Strengthen”.
Today i am having one of those odd days where nothing feels like it is going my way.  Evident by the fact that i arrived at a professors office to discuss the exam that is next week, he informed me that the exam is actually based on 4 more chapters than i had realized.  There goes my week… I don’t know how i had screwed that up, but i definitely know that i am going to take FULL advantage of this “Crib Sheet” he is allowing us to make.  Has anyone else ever made one of these before?  Does anyone know what i am talking about at all? haha… Oh well, dinner last night can be summed up in one word: Broccoli.
I believe i cooked enough to last 4 days, and you know i had my fruit crime scene to top it all off. :)

A little spicy olive action…

This mess usually gets thrown into a bowl with unsweetened soy or rice milk after the plated pic is taken!  And don’t worry, i had a block of plain tofu and soy cooking for a little protein kick…

Ya i know, not to pretty, but i usually don’t have a lot of time to cook dinner once i get home so i don’t marinate my tofu in anything, just spread whatever sauce i want on after it has cooked!  Sorry about the flash in the pic, there was no other way to do this while it was still in the oven, and i wanted it to cook faster because it was getting late ;)
Today is looking like a long day, maybe i’ll get some time to grocery shop if i can get my workout in between appointments!  It is much needed as you can probably tell from the above pics.

Blah, Blah, Blah

There is NOTHING better than the feeling after a fast 10 miler, and a shower of course!  And i officially do not care what anyone says or thinks, Ke$ha has some catchy beats yo… Even i was reluctant to purchase any of her whining on Itunes, but her new song is one of my top 5 to run to right now, i must have replayed it four times on my run today and i finished 10.5 in just over 83 minutes.  That is saying something… Not my best, and i rarely ever glance at my watch during a run, but i knew it felt good, and that is ALL i care about :) My eats today were pretty inspired also; Heres what i’m ta-ta-ta-talkin’ ’bout…

Uh huh… I sucked it up and no-baked a version of the awesome Averie’s Raw Donut Holes recently (today) adapted by the brilliant Katie of Yes I Want Cake.  Both of these girls have GREAT recipes on their sites, and i can’t wait to try most of them once exams/new years resolutions at my work die down! ;)   I used Katie’s recipe because i had most ingredients on hand, and i threw in 2 Tbs. of Coconut, 2 Tbs. Chia Seeds, 2 Tbs. Millet and 2 Tbs. Crushed Walnuts!  These are ungodly!  So much so, i have hidden them from my family :D  Not that they probably have already found them… But i tried!  Thanks you guys, great recipes!  Off to make my go-to recovery dinner (lima beans, spinach-tofu stir-fry, and obviously apples)  :)  Deane, Out!

Don’t You…Forget About Me

If you are wondering where the above name came from, you can blame it on the fact that i had the BEST night ever last night which ended with finally getting to sit down, relax, eat popcorn and watch one of the most feel good movies ever made w/ my valentine… The Breakfast Club!
I don’t think i have laughed that hard in awhile, I don’t know why Judd Nelson never made it big after that, he is great in that movie!
Let me start off my apologizing for being MIA all week, but i have had 2 exams my tutoring schedule has taken off like crazy because it is mid-term time for everyone here.  What sucks about this; we have a new thing this week inappropriately coined “reading week”.  It is a week off before most mid-terms begin to get your study on and organize yourself.  This would be simply splen-diff-orous in addition to March break.  But guess what, NO MORE MARCH BREAK.  Yeah, the fourth pillar at the opening ceremonies isn’t the only thing Canada screwed up this week.
Speaking of… How is everyone enjoying the Olympics?  Incredibly sad about the Georgian luger… I also thought it was pretty distasteful of NBC to show the clip numerous times during hour in which hundreds of millions were watching, most likely including many small children and family members of the deceased…
On a lighter note, i can’t wait for Halfpipe and Downhill Snowboarding/Skiing!  What are you guys waiting for?  I actually was lucky enough for my essay to be chosen and was invited to carry the Olympic Torch just north of Vancouver when it passed through a couple of weeks ago, but due to my tuition/insurance/life payments that all seem to have fell at the same time, i could not afford the $950 dollar round trip ticket out from Detroit so i had to pass the opportunity to some other lucky individual.  I was down for about 2 solid days about it, but i am moving on and realize that everything happens for a reason.  Hopefully all of this schooling will pay off sooner than later and maybe i’ll be the one treating the olympians at the next Winter olympics! :)
This morning i awoke to the smell of fresh-home-baked english muffins and cinnamon-zucchini-raisin pilaf!  It was amazing, but went un-pictured due to the fact that my camera was not with me!  Now i am back home and i created a Valentine’s Day masterpiece for my Valentine about an hour ago… Check it out:

Okay, so i know they are not the best looking mini-cakes you have ever seen.  But it’s the thought/taste that counts right?  And i knew they would HAVE to taste decent with this honey a friend from work brought back from Cuba for my mother who was kind enough to share some with me:

Another Vital Ingredient in this Mess of a Mini-Heart Cake:

Along with 2 Tablespoons of those two went a half cup of spelt flour, 2 Tbs Raisins, 2 Tbs Slivered Almonds, 2 Tbs Crushed Hazelnuts, 2 Tbs Frozen Cherries, 1 Tbs Almond Butter, 1 Tbs Flax Seeds.  Blend All Ingredients and Form Heart Shapes.  Bake in oven at 300 degrees for 5-7 minutes.  :)

Don’t think the Chocolate Bar is Vegan, but hey it’s Valentine’s Day and not only will i still be eating it, but i might even enjoy it :D
Looking through my running mag after my 8 miler today i found out something cool worth sharing:

That’s right people, Apollo is a runner!  He says it keeps the bulk off because he builds muscle WAY to easily and running allows him to  stay “stringy”.  Never heard that reason before from anyone i have trained…  Is it cool to be stringy?  Haha.  I still like him.  By the way, to all of my friends in Colorado: Send snow ASAP!

Snow Time…

Two words could sum up the last few days of mine perfectly; Shovel, Sneeze.  I don’t think there is anything else i have done other than those two things.  Yes people, i have a peanut allergy/intolerance and engaged in a thoughtless snack a couple nights ago that involved peanuts, unfortunately, and my gi tract as well as my airways have NOT thanked me for it!  Didn’t stop me from shoveling my way out to school today though…

Is there anything more frustrating then hitting a crack in your driveway shoveling, or those FRUSTRATING lines of snow that you get in between each path you shovel?

Just kidding, i wish…  This was just a sweet bus i came across during my Summer spent in Boulder last year.  I’m pretty sure it was for a local camp, but i would not be ashamed to pull up in that every day to my University :)  Favors to ask of you guys;  Convince me my way is dumb and fill me in on how to shovel properly or  shoot me some ideas on what to make for dinner tonight??  I’m pretty sure it might be a cereal and toast night…That is what it is looking like, not to mention i just crave it sometimes… Both would be appreciated!!!

Does anyone else ever listen to music on their way to work/school in the morning, hear a song you haven’t heard in a long time and get it STUCK IN YOUR HEAD FOR THE REST OF THE FRIGGIN’ DAY?  That is pretty much how my day began today… For all my Jay-Z fans out there, maybe i am the only one who knows every single lyric to every single one of his albums but once i hear me some Jay it is extremely hard to concentrate on anything else the rest of the day.  Side note:  Singing to myself, unfortunately for others,  is not a trait i am familiar with, so whoever else is around is usually awarded with a performance.  Moving on to something a little more interesting/controversial…
Considering I intend on this site being a fitness/nutrition based outlet for me to voice my opinions on all the “new fad diets”, interesting new exercise myths, new vegan restaurants/food, i plan on stirring up the pot every once in awhile and throwing some of my views out to all of you for you to do with what you wish!  One of my greatest pleasures in life is receiving feedback from any and every one that feels they have enough knowledge about a given topic to form an intelligent response.  I never disregard anyones opinions or thoughts unless i feel that they truly have no business speaking on the matter or have not spent the time to educate themselves.  Otherwise i find discovering and exploring everyone else’s perception exciting, and thought provoking!  Now that I have my disclaimer out of the way…
There was a question that came up in my morning class regarding the choice everyone possesses of whether or not they wish to eat animal meat or other byproducts.  This stemmed from a debate on the ethical treatment of farmed animals where i gladly provided my firm opinions while somehow transitioning to the concept of vegan/vegetarianism without even trying!  Pretty smooth, huh?  I certainly thought so, until i heard one girl speak up in a slightly shrill manner directing all of her attention and energy in my direction.  “So does that mean your going to force your children to become vegans as well?”   Uh oh… I knew this was not going to end well.  Although i like to consider myself a kind person who grew up in a family with many values and morals; I was simply never blessed with the ability to convey my thoughts in any other way then harshly once verbally provoked.  That is right children, sh!t was going down.  After ten minutes of explaining to Lindsey Lohan why i don’t believe my children will ever need to be “forced” into a non-violent diet rather how i would “reinforce” the theory that meat simply makes you stupid, and how she was a prime example.  Now i know what your thinking… That was pretty rude, right?  Well, you have to understand two things about here;  This comment was made after providing a fully detailed, and knowledgeable explanation for my life choices that did not verge on defensive what-so-ever but left room for debate.  And debate she would, calling me out in front of all of my class, accusing me of personally tearing apart values that children should develop on there own.  I had no words left to say to her knowing that she no longer deserved to be present in this debate with her under-developed views on family politics, vegetarianism, and probably reading in general.  At this time the professor decided he should probably intervene before she lunged over the aisle and beat me to death with her oversized sunglasses, he raised the question to both her and I of what our thoughts were on grain fed, cage free animals?  “I try to eat them whenever i can, i feel better knowing that they were happy” she giggled.  After the laughter in the class died down, it was time for my input.  Uh oh again… Attempting for this answer to be a simple and short alternative to my last outburst i responded with “I think it’s fantastic that these animals were fed decently, supposedly never given antibiotics, and lived in (bigger) cages, but that all goes to hell once we butcher them for their meat”.  Now notice how i grouped myself as a human and held myself accountable as well as the rest of my class for these spontaneous acts of violence we commit to feed our overly-carnivorous population.  Apparently it didn’t help when i turned my attention back toward Lohan’s direction and added “So you are totally fine with eating dead animals, so long as those animals were happy vegetarians before being murdered?”  Ya, my hopes of keeping a low profile in that class went down the drain pretty quickly after that.  Anyways, the question at hand, how will you go about parenting your child/children as a vegetarian?  What happens if your partner doesn’t agree with your particular views?  Have you ever had to deal with this issue, and if so; was it difficult?
Let me finish off with some delicious granola i baked up for myself in between workouts last night… Hope you all have a wonderful day :)

In Ze Bowl-
1/4 Cup Pumpkin Seeds
1/4 Cup Pecans
1/4 Cup Raisins
1/8 Cup Chia Seeds
2 TBS. Flax Seeds
1/2 Cup Wheat Bran
1 Cup Puffed Millet
2 Cup Oats
1/2 Cup Unsweetened Applesauce
1/2 Cup Unsweetened Soy Yogurt

Shaken well, spread out over a tinfoil lined baking sheet…

Bake for 20 minutes at 385 degrees! And… Instant Healthy Snackage.

5:30 a.m. –  A tiny beeping noise coming from under my warm, comfy, down blanket… It was the stupid alarm on my stupid watch telling me that i needed to get up and brave the chilly, arctic environment i call home to get dressed and get my sweat on.

5:39 a.m. – Chug 2 500ml bottles of water mixed with this.  (Chocolate if you are wondering).  Eat a handful of pumpkin seeds and raisins and rush out the door to do about 70 minutes of running.

7:20 a.m. – Rush back into the shower, wash my hair with this.  (Biotin, it works so well and leaves my hair nourished and fluffy.)  :)

7:30 a.m. – Brush my teeth with this. (Orange-Mango Oil)  Don’t know it ’till you’ve tried it!  It is amazing and i love the fact that it isn’t sweet, yet leaves my mouth feeling so fresh and so clean…  clean… (i had to)

7:34 a.m. – Dash out the door, literally, forgetting to lock it, of course.  Drive to my 8:30 Child Development Exam and ACE it :D

8:30 a.m. – Realize i am going to KILL this test and put a big smile on my face.

9:17 a.m. –  Leave my exam, run back to my car, and notice i have the rest of the day to my self for once, time to get some serious errands finished up.

Before i leave you for the day, i just wanted to share something pretty awesome that happened to me today while at the grocery store.  An older lady came up to me in the bulk section and asked me what i used my nutri-yeast for that i was scooping out by the shovel.  I explained to her what i usually cook and how i go about using it which eventually lead into about a 20 minute discussion on veganism and fitness.  It was great!  I was so psyched that i had the time to talk for once and i love hearing about any secrets seniors have that seem to be as fit as ever!  She was so inspiring and i actually learned that she was a champion race-walker for her age group in her seventies fifteen years ago.  She carries the medal around with her and even explained/demonstrated what exactly race-walking was right there in the bulk isle.  After about 30 minutes of hearing crazy amounts of nutritional knowledge come from a 88 year-old, we had to get out of everyone else’s way that were trying to maneuver around us in the isle, and she left saying “I really hope i see your face again”.  This just brought the most happiness to my day that i could ever imagine!  Maybe it is because i don’t have grandparents around to talk to anymore that i appreciate the amount of wisdom older folks acquire and are willing to talk about and teach…  Anyway, it made my day!  Does anyone else ever take a few steps out of there comfort zone and strike up convo with seemingly friendly strangers?  This is the story of my life! :)

Welcome to my eats…

And here. we. go.

I’ll start y’all off with a little Tofu Spinach Edamame stir-fry.  This contained Mori-Nu Lite Tofu, 2 Handfuls of Spinach, Eden Foods Dried Edamame, and Westbrae All Natural Sodium Free Dijon Mustard.  I love this combo and it is perfect when sauteed in a bit of unsweetened almond milk and water to taste!  The Edamame adds the perfect crunchy texture.

Next is my FAMOUS veggie tray that i bake for my family every now and then and sometimes leave them some! ;)  Carrots, Brussels, Mushrooms, Bean Sprouts, Green Beans, Broc, Broccoflower, Cauliflower, and Tomatoes,  all in a nutritional yeast/almond milk bath.  You will start to see that i love almond milk on everything.  Season with a little black pepper and some sesame seeds and poof.  Instant deliciousness…

Next up, my daily does of Vitamin C and Fiber with a pot of Limas:

All mine by the way… Portion-Control Smortion-Control… When it comes to veggies i am a bottomless pit and i never feel one ounce of guilt, just good:).

That apple never stood a chance.  Several Turkish Apricots, Leftover Sweet Tater Fries, Natures Path Flax Plus Flakes, Cinnamon Puffins, Soy Yogurt and Cinnamon to garnish! :)
